  • 1 lb (450g) tomatillos, husked and rinsed
  • 2 poblano peppers
  • 12 jalapeños (adjust to taste)
  • 1 white onion, quartered
  • 4 garlic cloves
  • 1 bunch cilantro (stems included)
  • 1 tsp cumin
  • 1 tsp oregano
  • 4 cups chicken broth
  • For the Soup:
  • 2 tbsp olive oil
  • 1 lb (450g) chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (15oz/425g) white beans, drained
  • 1 cup corn kernels (fresh or frozen)
  • For Garnish:
  • Corn tortillas, cut into strips and fried
  • Avocado slices
  • Queso fresco or cotija cheese
  • Lime wedges
  • Radish slices
  • Sour cream

Instructions

  1. Roast vegetables: Broil tomatillos, poblanos, jalapeños, onion and garlic on a baking sheet until charred (about 10 minutes).
  2. Blend sauce: Transfer roasted veggies to blender with cilantro, cumin, oregano and 1 cup broth. Blend until smooth.
  3. Cook chicken: In a pot, heat oil over medium. Season chicken with salt/pepper and cook until browned (5 min/side). Remove and shred.
  4. Simmer soup: Pour green sauce into pot with remaining broth. Add beans, corn and shredded chicken. Simmer 15 minutes.
  5. Prepare toppings: While soup simmers, fry tortilla strips in oil until crisp (or bake at 400°F for 10 minutes).
  6. Serve: Ladle soup into bowls and top with tortilla strips, avocado, cheese, radish and a dollop of sour cream. Serve with lime wedges.
