A vibrant Green Pea Dip made with fresh ingredients, perfect for summer gatherings or as a healthy snack.

- 2 cups frozen peas, blanched
- 3/4 cup plain Greek yogurt
- 1 avocado, pitted
- 1 cup fresh basil leaves
- 2–3 garlic cloves
- Juice of 1 lemon
- 1 teaspoon salt
- A few grinds of black pepper
- 2 tablespoons toasted pine nuts
- 1/4 cup crumbled feta
- 1/4 cup pomegranate seeds
- 2 tablespoons chopped herbs (parsley or basil)
Instructions
- Prepare the peas: Bring a small pot of water to a rolling boil. Add your frozen peas and cook for 1-2 minutes until they’re bright green. Drain and rinse under cold water.
- Blend the ingredients: In a food processor, combine the blanched peas, avocado, Greek yogurt, basil, garlic, lemon juice, salt, and black pepper. Blend for about 30 seconds until silky smooth.
- Taste and adjust: Give your dip a taste and adjust seasoning as needed.
- Display and garnish: Spoon the dip into a serving bowl and smooth the surface. Top with toasted pine nuts, crumbled feta, pomegranate seeds, and chopped herbs.
- Serve: Pair your dip with toasted crostini or vegetable sticks.
Notes
For a smoother dip, add a little water or more lemon juice. Store in an airtight container in the refrigerator for up to 3 days.
