Crispy, cheesy green bean bites that encapsulate the flavors of traditional green bean casserole in a delightful finger food form.
Ingredients

- 2 cups green beans (fresh or frozen, thawed and drained)
- 1 can cream of mushroom soup
- 1 cup shredded sharp cheddar cheese
- 1 cup panko breadcrumbs
- 2 large eggs (room temperature)
- Salt and pepper to taste
- 1 cup French fried onions
Instructions
- Preheat the oven to 375°F (190°C).
- Blanch the green beans in boiling salted water for 2-3 minutes, then transfer to an ice bath.
- In a bowl, mix green beans, cream of mushroom soup, cheddar cheese, breadcrumbs, eggs, salt, and pepper until combined.
- Grease a mini muffin tin and fill each cup about 3/4 full with the mixture.
- Top with French fried onions.
- Bake for 15-20 minutes until golden and crispy.
- Let cool briefly before serving.
Notes
Leftovers can be stored for up to 3 days in an airtight container in the fridge. Reheat in a 350°F oven for about 10 minutes.
