- 1 cup Greek yogurt
- 1/2 cup peanut butter
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix together Greek yogurt, peanut butter, honey (or maple syrup), and eggs until smooth (around 2 minutes).
- In another bowl, whisk together whole wheat flour, baking powder, baking soda, and salt until evenly mixed.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips carefully.
- Pour the batter into the muffin tins, filling each about 2/3 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let the muffins cool for a few minutes before transferring to a wire rack.
Notes
For best results, let ingredients come to room temperature before mixing. Store muffins in an airtight container at room temperature for 2-3 days or in the fridge for a week.
