Description

A flavorful dish featuring marinated chicken with Greek yogurt, lemon, and aromatic herbs, perfect for any gathering.


Ingredients

  • 4 boneless, skinless chicken breasts
  • ½ cup plain Greek yogurt
  • ¼ cup olive oil
  • 3 cloves garlic, minced
  • Zest and juice of 2 lemons
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • ½ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ½ teaspoon cracked black pepper

Instructions

  1. In a large mixing bowl, whisk together the Greek yogurt, olive oil, lemon zest, juice, minced garlic, oregano, onion powder, coriander, salt, and pepper until creamy and fragrant.
  2. Optionally, reserve ½ cup of the marinade for basting.
  3. Add the chicken breasts to the marinade, ensuring they’re coated completely. Cover and refrigerate for at least 30 minutes, preferably up to 24 hours.
  4. Remove the chicken from the fridge 30 minutes before cooking to let it reach room temperature.
  5. Preheat your oven to 400°F (200°C). Heat a grill pan over medium-high heat and lightly oil it. Sear the chicken on one side for about 5 minutes.
  6. Flip the chicken and transfer the pan to the oven. Bake for an additional 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 5 minutes before slicing.

Notes

Avoid overcrowding the pan while searing. Store leftovers in an airtight container for up to 3 days.
