- 4 boneless, skinless chicken breasts
- ½ cup plain Greek yogurt
- ¼ cup olive oil
- 3 cloves garlic, minced
- Zest and juice of 2 lemons
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- ½ teaspoon ground coriander
- 1 teaspoon sea salt
- ½ teaspoon cracked black pepper
Instructions
- In a large mixing bowl, whisk together the Greek yogurt, olive oil, lemon zest, juice, minced garlic, oregano, onion powder, coriander, salt, and pepper until creamy and fragrant.
- Optionally, reserve ½ cup of the marinade for basting.
- Add the chicken breasts to the marinade, ensuring they’re coated completely. Cover and refrigerate for at least 30 minutes, preferably up to 24 hours.
- Remove the chicken from the fridge 30 minutes before cooking to let it reach room temperature.
- Preheat your oven to 400°F (200°C). Heat a grill pan over medium-high heat and lightly oil it. Sear the chicken on one side for about 5 minutes.
- Flip the chicken and transfer the pan to the oven. Bake for an additional 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing.
Notes
Avoid overcrowding the pan while searing. Store leftovers in an airtight container for up to 3 days.
