Description

Juicy and flavorful Greek Chicken Kabobs marinated in a tangy Greek yogurt mixture, perfect for summer cookouts and family dinners.


Ingredients

  • ½ cup plain Greek yogurt
  • 34 cloves garlic, finely minced or grated
  • 12 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • Juice from ½ lemon (about to 2 tablespoons)
  • 1½ teaspoons dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon dried rosemary
  • 2 pounds boneless skinless chicken breasts or thighs, cut into -inch chunks
  • Tzatziki sauce (optional, for serving)
  • Fresh herbs for garnish: dill, parsley, or mint
  • Wooden skewers (if using, soak in water for at least 30 minutes before cooking)

Instructions

  1. In a large bowl, whisk together the Greek yogurt, garlic, olive oil, honey, lemon juice, oregano, paprika, salt, pepper, and rosemary.
  2. Add the chicken pieces and toss to coat evenly. Cover and allow to marinate in the fridge for 30 minutes to 8 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken onto skewers without overcrowding them.
  5. Grill skewers for 3–4 minutes, flip, and cook another 2–4 minutes, or until the internal temperature reaches 160°F. Allow to rest to reach 165°F.
  6. Serve with tzatziki, warm pita, lemon wedges, or over a fresh salad. Garnish with herbs of your choice.

Notes

For extra juiciness, consider brining your chicken beforehand. Store leftover kabobs in an airtight container for up to 3 days.
