Greek Chicken and Lemon Rice

Description

A delightful Mediterranean dish combining succulent chicken, tangy lemon-flavored rice, and fresh vegetables.


Ingredients

  • 4 Chicken Breasts
  • 1/4 cup Lemon Juice
  • 3 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 2 cups Spinach, fresh
  • 1 cup Grape Tomatoes, halved
  • 1 can Chickpeas, drained
  • 1/2 cup Feta Cheese, crumbled
  • 2 cups Chicken Broth, low-sodium
  • 1 1/2 cups White Rice
  • Salt & Pepper, to taste
  • 1 teaspoon Oregano, dried

Instructions

  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Season chicken with salt, pepper, and oregano. Cook for 7-8 minutes on each side until browned and cooked through. Remove and let rest.
  2. In the same skillet, add 1 tablespoon of olive oil, sauté garlic for 1 minute until fragrant.
  3. Add lemon juice and chicken broth, bringing to a boil. Stir in rice, cover, and simmer for 15 minutes.
  4. Add spinach, tomatoes, and chickpeas. Place chicken back on top, cover, and cook for an additional 5-7 minutes.
  5. Sprinkle with feta cheese and serve.

Notes

Ensure chicken is at room temperature before cooking for even doneness. Adjust seasonings to your taste.
