- 4 Chicken Breasts
- 1/4 cup Lemon Juice
- 3 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 2 cups Spinach, fresh
- 1 cup Grape Tomatoes, halved
- 1 can Chickpeas, drained
- 1/2 cup Feta Cheese, crumbled
- 2 cups Chicken Broth, low-sodium
- 1 1/2 cups White Rice
- Salt & Pepper, to taste
- 1 teaspoon Oregano, dried
Instructions
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Season chicken with salt, pepper, and oregano. Cook for 7-8 minutes on each side until browned and cooked through. Remove and let rest.
- In the same skillet, add 1 tablespoon of olive oil, sauté garlic for 1 minute until fragrant.
- Add lemon juice and chicken broth, bringing to a boil. Stir in rice, cover, and simmer for 15 minutes.
- Add spinach, tomatoes, and chickpeas. Place chicken back on top, cover, and cook for an additional 5-7 minutes.
- Sprinkle with feta cheese and serve.
Notes
Ensure chicken is at room temperature before cooking for even doneness. Adjust seasonings to your taste.
