Description

A nostalgic muffin recipe that captures the essence of campfire s’mores, combining crushed graham crackers with sweet and spicy flavors.


Ingredients

  • 1 cup crushed graham crackers (plus 2 tbsp for topping)
  • 1 cup whole wheat flour (or all-purpose flour)
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup milk
  • ¼ cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin pan generously with vegetable oil or nonstick cooking spray.
  3. Crush the graham crackers into a crumb-like consistency.
  4. In a large mixing bowl, combine crushed graham crackers, flour, brown sugar, cinnamon, baking powder, baking soda, and salt.
  5. In a separate bowl, beat the egg and mix in the milk, vegetable oil, and vanilla extract.
  6. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  7. Fill each muffin cup with approximately ¼ cup of batter.
  8. Sprinkle the reserved crushed graham crackers on top of each muffin.
  9. Bake for 20-22 minutes, or until golden brown.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

Store leftover muffins in an airtight container for up to 3 days or in the fridge for up to a week. They can also be frozen for up to 3 months.
