Description

Ingredients

  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup cooked sausage (optional)
  • 1/2 cup chopped parsley

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare cornbread mix according to package directions, substituting vegetable broth for water.
  3. Sauté onion and celery until softened, about 5-7 minutes.
  4. Add sage, thyme, salt, pepper, and optional sausage; cook 2-3 minutes.
  5. Combine vegetable mixture with cornbread batter; fold in parsley.
