Instructions
- Preheat oven to 350°F (175°C).
- Prepare cornbread mix according to package directions, substituting vegetable broth for water.
- Sauté onion and celery until softened, about 5-7 minutes.
- Add sage, thyme, salt, pepper, and optional sausage; cook 2-3 minutes.
- Combine vegetable mixture with cornbread batter; fold in parsley.
- Spoon into greased mini muffin tin.
- Bake 15-20 minutes until golden brown and toothpick comes out clean.
- Cool slightly before serving.
