Description

These rich and fudgy gluten-free red velvet brownies made with almond flour feature a creamy swirl, offering a delightful twist on a classic dessert.


Ingredients

  • 3/4 cup almond flour
  • 3 large eggs
  • 10 tbsp unsalted butter
  • 1/3 cup cocoa powder
  • 3/4 cup coconut sugar or erythritol
  • 1 tsp baking powder
  • 1 tsp white vinegar
  • 1 tbsp red food coloring
  • 1/4 tsp salt
  • 6 oz cream cheese
  • 1/4 cup sweetener (for cream cheese layer)
  • 1 large egg (for cream cheese layer)
  • 1 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a small bowl, beat together the cream cheese, 1/4 cup sweetener, 1 egg, and vanilla extract until smooth and creamy.
  3. In a medium saucepan, melt the butter over low heat; let it cool slightly before whisking in the 3 eggs.
  4. Add the vinegar and red food coloring to the mixture and mix well.
  5. In another bowl, whisk together almond flour, cocoa powder, 3/4 cup sweetener, baking powder, and salt.
  6. Fold the dry ingredients into the wet mixture until just incorporated.
  7. Pour the brownie batter into the prepared pan and spoon the cream cheese mixture over the top, swirling lightly with a knife.
  8. Bake for 25-30 minutes until the edges are set but the center has a slight jiggle.
  9. Let cool completely in the pan before cutting into squares.
