- 3/4 cup almond flour
- 3 large eggs
- 10 tbsp unsalted butter
- 1/3 cup cocoa powder
- 3/4 cup coconut sugar or erythritol
- 1 tsp baking powder
- 1 tsp white vinegar
- 1 tbsp red food coloring
- 1/4 tsp salt
- 6 oz cream cheese
- 1/4 cup sweetener (for cream cheese layer)
- 1 large egg (for cream cheese layer)
- 1 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
- In a small bowl, beat together the cream cheese, 1/4 cup sweetener, 1 egg, and vanilla extract until smooth and creamy.
- In a medium saucepan, melt the butter over low heat; let it cool slightly before whisking in the 3 eggs.
- Add the vinegar and red food coloring to the mixture and mix well.
- In another bowl, whisk together almond flour, cocoa powder, 3/4 cup sweetener, baking powder, and salt.
- Fold the dry ingredients into the wet mixture until just incorporated.
- Pour the brownie batter into the prepared pan and spoon the cream cheese mixture over the top, swirling lightly with a knife.
- Bake for 25-30 minutes until the edges are set but the center has a slight jiggle.
- Let cool completely in the pan before cutting into squares.
