- 1 cup powdered sugar
- 2–3 tbsp milk
- 1 tsp vanilla extract
Instructions
- Prepare the Dough: In a large bowl, whisk together flour, salt, and sugar. Add chilled butter and use a pastry cutter or your fingers to incorporate it until the mixture resembles coarse crumbs.
- Ice Water Incorporation: Gradually mix in ice water, one tablespoon at a time, until the dough holds together without being sticky. Wrap in plastic wrap and refrigerate for at least 1 hour.
- Make the Filling: In a bowl, combine peach chunks, sugar, lemon juice, and vanilla extract. Let it sit for about 10-15 minutes.
- Roll Out the Dough: On a floured surface, roll out the dough to about ⅛-inch thickness. Cut into 5-inch circles using a pastry cutter.
- Fill the Hand Pies: Place a tablespoon of peach filling onto one half of each dough circle. Fold the dough over and crimp the edges with a fork to seal.
- Bake: Preheat the oven to 375°F (190°C). Arrange the hand pies on a parchment-lined baking sheet. Bake for 25-30 minutes until golden brown.
- Glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over warm pies before serving.
Notes
