- 1/3 cup low-sodium soy sauce
- 3 tbsp honey
- 4 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 1 tsp sesame oil
- 2 tsp gochujang
- 1 tsp rice vinegar
- 1/4 tsp red pepper flakes
- 4 pork chops (about 1 inch thick)
- 1 tbsp olive oil
- Black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the soy sauce, honey, minced garlic, grated ginger, sesame oil, gochujang, rice vinegar, and red pepper flakes. Stir until well mixed.
- Pat the pork chops dry with paper towels.
- Place the pork chops in the marinade, turning to coat thoroughly. Set aside for about 20 minutes.
- In an oven-safe skillet, heat the olive oil over medium-high heat. Sear the pork chops for 2-3 minutes until golden-brown on one side.
- Flip the chops, pour in the reserved marinade, and cook for another 2-3 minutes.
- Transfer the skillet to the preheated oven and bake for 5-10 minutes or until the internal temperature reaches 145°F (63°C).
- Remove the skillet from the oven, season with fresh black pepper, and let the chops rest briefly before serving.
Notes
Use a cast-iron skillet for optimal searing. Marinating the pork chops in advance enhances flavor.
