- Sprinkles or crushed gingerbread cookies for coating
Instructions
- In a large bowl, combine the gingerbread cookie crumbs, softened cream cheese, vanilla extract, cinnamon, nutmeg, and ginger until the mixture is well blended and smooth.
- Cover the bowl with plastic wrap and chill in the refrigerator for about 30 minutes.
- Once chilled, scoop out a tablespoon of the mixture and roll it into small balls, about 1 inch in diameter.
- Place the white chocolate chips in a microwave-safe bowl and heat in 30-second intervals, stirring until melted and smooth.
- Dip each truffle into the melted white chocolate and let the excess drip off.
- Place them on a baking sheet lined with parchment paper and decorate with additional gingerbread crumbs or sprinkles.
- Refrigerate the truffles for an additional 30 minutes until the chocolate is firm.
