- 3/4 cup unsalted butter (170 g or 1 1/2 sticks)
- 1 cup packed brown sugar (220 g)
- 1 large egg
- 3/4 cup molasses (230 g)
- 1 tablespoon pumpkin pie spice
- 1 1/2 teaspoon ground ginger
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoon baking soda
- 4 cups all-purpose flour (560 g)
- 10 ounces M&M candies (1 small bag)
Instructions
- Cream the butter and sugar together until light and fluffy.
- Add the egg and molasses; mix until combined.
- Incorporate the pumpkin pie spice, ground ginger, black pepper, salt, and baking soda.
- Gradually add the flour until the dough pulls away from the bowl.
- Chill the dough wrapped in plastic wrap for at least 2 hours.
- Preheat the oven to 325°F (160°C).
- Roll out the dough and cut into tree shapes; place on a baking sheet.
- Press M&Ms into the tops of the cookies.
- Bake for 8 to 10 minutes until edges are firm.
- Cool before serving.
