- 1 lb Chicken (boneless, skinless, cut into pieces)
- 4 cups Chicken Broth
- 2 cups Water
- 1 cup Egg Noodles
- 2 tablespoons Ginger (minced)
- 4 cloves Garlic (minced)
- 1 Onion (chopped)
- 2 Carrots (sliced)
- 2 Celery Stalks (sliced)
- Salt and Pepper to taste
- Green Onions (for garnish)
Instructions
- In a large pot, heat a splash of oil over medium heat. Add the chopped onion, minced ginger, and minced garlic, and sauté until fragrant, about 3-4 minutes.
- Toss in the chicken pieces and stir, cooking them until they are no longer pink, about 5-7 minutes.
- Pour in the chicken broth and water, stirring to combine. Bring it to a gentle boil, which should take about 5 minutes.
- Add the sliced carrots and celery along with the egg noodles. Cook until the noodles are al dente, around 7-8 minutes.
- Sprinkle in salt and pepper to taste. Stir well.
- Dish out the soup in bowls and garnish generously with chopped green onions. Serve it hot and enjoy!
