- 1/3 cup brown sugar
- 2 tbsp granulated sugar
- 1/2 egg (whisked)
- 3/4 tsp vanilla extract
- 1/2 cup plus 1 tbsp all-purpose flour

- 1/4 tsp baking soda
- 1/4 tsp espresso powder
- 1/8 tsp salt
- 1/3 cup chocolate chips
- 1/4 cup candy-coated chocolate pieces (like M&M’s)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix 3 tbsp melted butter with 1/3 cup brown sugar and 2 tbsp granulated sugar until fluffy.
- Add the whisked half-egg and 3/4 tsp vanilla extract, mixing until smooth.
- In another bowl, whisk together 1/2 cup plus 1 tbsp flour, 1 1/2 tbsp cocoa powder, 1/4 tsp baking soda, 1/4 tsp espresso powder, and 1/8 tsp salt.
- Fold the dry ingredients into the wet mixture until just combined.
- Stir in 1/3 cup chocolate chips.
- Shape the dough into a 7-inch circle on the prepared baking sheet and top with 1/4 cup candy-coated chocolates.
- Bake for 12-14 minutes until edges are set and center is soft.
- Cool for 5 minutes on the baking sheet, then transfer to a rack to cool completely.
Notes
Cool cookies completely before storing. For a crispier edge, chill the dough for 30 minutes before baking.
