- Crust:
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 4 oz semi-sweet chocolate, melted and cooled
- 1/4 cup unsweetened cocoa powder
- 1/2 cup heavy cream
- German Chocolate Topping:
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- 1/2 cup unsalted butter
- 1 tsp vanilla extract
- 1 1/3 cups sweetened shredded coconut
- 1 cup chopped pecans
Instructions
- Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
- Make crust: Mix cookie crumbs, sugar, and melted butter. Press into pan bottom and 1 inch up sides. Bake for 10 minutes, then cool.
- Prepare filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix in melted chocolate, cocoa powder, and heavy cream until fully incorporated.
- Bake cheesecake: Pour filling into crust. Bake for 50-55 minutes until set but slightly jiggly in center. Cool completely, then refrigerate for at least 4 hours.
- Make topping: In saucepan, whisk evaporated milk, sugar, egg yolks, and butter. Cook over medium heat until thickened (about 12 minutes). Remove from heat, stir in vanilla, coconut, and pecans. Cool slightly.
- Assemble: Spread topping over chilled cheesecake. Refrigerate for 1 hour before serving.
