Ingredients

Scale
  • Crust:
    • 1 1/2 cups chocolate cookie crumbs
    • 1/4 cup granulated sugar
    • 1/3 cup unsalted butter, melted
  • Cheesecake Filling:
    • 24 oz (680g) cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 4 oz semi-sweet chocolate, melted and cooled
    • 1/4 cup unsweetened cocoa powder
    • 1/2 cup heavy cream
  • German Chocolate Topping:
    • 1 cup evaporated milk
    • 1 cup granulated sugar
    • 3 large egg yolks
    • 1/2 cup unsalted butter
    • 1 tsp vanilla extract
    • 1 1/3 cups sweetened shredded coconut
    • 1 cup chopped pecans

Instructions

  1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Make crust: Mix cookie crumbs, sugar, and melted butter. Press into pan bottom and 1 inch up sides. Bake for 10 minutes, then cool.
  3. Prepare filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Mix in melted chocolate, cocoa powder, and heavy cream until fully incorporated.
  4. Bake cheesecake: Pour filling into crust. Bake for 50-55 minutes until set but slightly jiggly in center. Cool completely, then refrigerate for at least 4 hours.
  5. Make topping: In saucepan, whisk evaporated milk, sugar, egg yolks, and butter. Cook over medium heat until thickened (about 12 minutes). Remove from heat, stir in vanilla, coconut, and pecans. Cool slightly.
  6. Assemble: Spread topping over chilled cheesecake. Refrigerate for 1 hour before serving.

Notes

  • Use room temperature ingredients for smoothest filling
  • For cleaner slices, dip knife in hot water between cuts
  • Store covered in refrigerator for up to 5 days
