  • 3 packages cream cheese, room temperature
  • 1 1/2 cups granulated sugar
  • 1/4 cup Dutch-processed cocoa powder
  • 5 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup evaporated milk
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup roughly chopped pecans
  • Chocolate syrup for drizzling over cake

Instructions

  1. Preheat your oven to 325°F (160°C). Spray a 9-inch springform pan with nonstick cooking spray, and line the bottom with parchment paper.
  2. Combine the melted butter, flour, chopped pecans, and cocoa powder in a bowl, then press firmly into the bottom of the pan. Bake the crust for 10 minutes.
  3. Melt the chocolate chips with 1/4 cup of heavy cream in the microwave until smooth. Let cool slightly.
  4. Beat the cream cheese until smooth, gradually add the sugar and cocoa powder, then mix in the eggs one at a time. Blend in the melted chocolate mixture and vanilla extract.
  5. Pour the filling over the cooled crust and bake for about 70 minutes until edges are set but the center jiggles slightly.
  6. Cool the cheesecake to room temperature, then refrigerate for at least 4 hours or overnight.
  7. Combine the evaporated milk, butter, brown sugar, and egg yolks in a saucepan and cook over medium heat until thickened.
  8. Stir in vanilla, coconut, and chopped pecans.
  9. Spread the coconut topping over the cooled cheesecake and drizzle with chocolate syrup before serving.

Notes

Ensure cream cheese and eggs are room temperature for a smoother texture. For a gluten-free version, substitute almond flour for all-purpose flour.
