Description

A comforting and flavorful dish featuring succulent shrimp over a bed of mashed fried plantains, infused with garlic and nostalgia.


Ingredients

  • 2 large green plantains, peeled and cut into 1-inch slices
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon butter, room temperature
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime
  • ¼ cup crumbled bacon, optional

Instructions

  1. Peel and cut the plantains into 1-inch slices and let them breathe for about 5 minutes.
  2. In a large skillet, heat the olive oil over medium heat and fry the plantain slices until golden and tender, about 4-5 minutes per side.
  3. In the same skillet, reduce to low heat and add the butter. Once melted, add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the shrimp, seasoning with salt, black pepper, and paprika. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
  5. Pour in the chicken broth and bring to a simmer. Cook for 2 more minutes, then stir in lime juice and cilantro.
  6. In a bowl, mash the fried plantains and mix in crumbled bacon, if using.
  7. Shape the mashed plantains into a dome or bowl and place on a plate.
  8. Ladle the garlic shrimp mixture over the mofongo and drizzle any leftovers on the plate.

Notes

For extra flavor, opt for homemade chicken broth and consider adding chili flakes for a spicy kick. Perfect for family gatherings or a cozy dinner!
