Ingredients

- 1 cup garlic scapes, chopped
- 1 lb pork, sliced thinly
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 3 tbsp vegetable oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tsp cornstarch (optional for thickening)
- Steamed rice (for serving)
Instructions
- Heat the vegetable oil in a heavy-bottomed cast iron skillet over medium-high heat until shimmering.
- Add the minced ginger and garlic. Sauté for about 30 seconds until fragrant.
- Toss in the sliced pork and stir-fry for about 4-5 minutes until browned on all sides.
- Add the chopped garlic scapes and continue stir-frying for an additional 3-4 minutes, or until they are tender-crisp.
- Mix the soy sauce, oyster sauce, and brown sugar in a small bowl, then pour over the pork and scapes.
- Cook for another minute if adding cornstarch with water until the sauce thickens.
- Serve your garlic scape stir fry hot over steamed rice.
Notes
For a healthier recipe, consider substituting brown sugar with monk fruit or coconut sugar.
