Description

A flavorful stir fry featuring tender pork and vibrant garlic scapes, enhanced with a rich sauce.


Ingredients

  • 1 cup garlic scapes, chopped
  • 1 lb pork, sliced thinly
  • 1/4 cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 3 tbsp vegetable oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tsp cornstarch (optional for thickening)
  • Steamed rice (for serving)

Instructions

  1. Heat the vegetable oil in a heavy-bottomed cast iron skillet over medium-high heat until shimmering.
  2. Add the minced ginger and garlic. Sauté for about 30 seconds until fragrant.
  3. Toss in the sliced pork and stir-fry for about 4-5 minutes until browned on all sides.
  4. Add the chopped garlic scapes and continue stir-frying for an additional 3-4 minutes, or until they are tender-crisp.
  5. Mix the soy sauce, oyster sauce, and brown sugar in a small bowl, then pour over the pork and scapes.
  6. Cook for another minute if adding cornstarch with water until the sauce thickens.
  7. Serve your garlic scape stir fry hot over steamed rice.

Notes

For a healthier recipe, consider substituting brown sugar with monk fruit or coconut sugar.
