Description

Ingredients

  • 2 ½ cups Warm Water
  • 2 ½ tsp Honey
  • ½ tsp Active Dry Yeast
  • 5 ⅓ cups All-Purpose Flour
  • 2 tbsp Kosher Salt (plus 1 ½ tsp for dough)
  • 4 tbsp Garlic Scapes (divided)
  • 4 tbsp Spring Onions (divided)
  • ¼ cup + 3 tbsp Extra Virgin Olive Oil (divided)
  • Flaky Sea Salt to finish

Instructions

  1. Combine warm water, honey, and yeast in a large bowl. Allow it to rest for about 10 minutes until frothy.
  2. Whisk in the all-purpose flour and kosher salt until just combined, then knead until smooth and elastic, about 8-10 minutes.
  3. Transfer the dough to a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm spot until doubled in size, approximately 1-2 hours.
  4. Punch the dough to release the air and transfer to a greased baking sheet, stretching it to fit the pan.
  5. Dimple the surface with your fingers and drizzle with 3 tbsp olive oil. Let it proof uncovered for about 30-45 minutes.
  6. Preheat your oven to 450°F (230°C). Top the dough with the remaining garlic scapes and spring onions, then sprinkle generously with flaky sea salt.
  7. Bake for about 20-25 minutes or until golden brown. Let it cool slightly before slicing.

Notes

For a variation, substitute honey with maple syrup for a vegan option. Use gluten-free flour for a gluten-free version.
