  • 2 bunches garlic scapes, cut into 1-inch pieces (1 ½2 cups chopped)
  • 3 tablespoons vegan butter
  • ½ teaspoon dried thyme (or 1 ½ teaspoons fresh thyme leaves)
  • 23 tablespoons reserved pasta cooking water
  • Zest and juice of one medium lemon
  • 3 tablespoons fresh parsley, finely chopped
  • to ½ cup vegan Parmesan cheese, grated
  • Fresh cracked black pepper to taste
  • Salt if needed

Instructions

  1. Boil the pasta: Bring a large pot of water to a boil. Generously salt the water before adding the pasta, cooking it according to package directions.
  2. Prep the cooking water: Before straining, carefully reserve 2-3 tablespoons of the starchy cooking water.
  3. Cook garlic scapes: In a large nonstick skillet over medium heat, add your vegan butter. Once melted, add the chopped garlic scapes and thyme, stirring occasionally. Cook uncovered for 5-8 minutes, or until tender yet crisp.
  4. Combine ingredients: Return the drained pasta to the pot. Mix in the cooked garlic scapes, reserved cooking water, vegan Parmesan, and parsley. Stir well to combine.
  5. Season: Add lemon juice, zest, and fresh cracked black pepper, stirring again. Taste and adjust with salt, if needed.
