  • 23 tablespoons reserved pasta cooking water
  • Zest and juice of one medium lemon
  • 3 tablespoons fresh parsley, finely chopped
  • to ½ cup vegan Parmesan cheese, grated
  • Fresh cracked black pepper to taste
  • Salt if needed

Instructions

  1. Boil the pasta in a large pot of salted water according to package directions.
  2. Prep the cooking water by reserving 2-3 tablespoons before straining the pasta.
  3. Cook garlic scapes in a skillet with melted vegan butter and thyme for 5-8 minutes until tender yet crisp.
  4. Combine the drained pasta with the cooked garlic scapes, reserved cooking water, vegan Parmesan, and parsley.
  5. Season with lemon juice, zest, and black pepper, adjusting with salt as needed.
