Instructions
- Boil the pasta in a large pot of salted water according to package directions.
- Prep the cooking water by reserving 2-3 tablespoons before straining the pasta.
- Cook garlic scapes in a skillet with melted vegan butter and thyme for 5-8 minutes until tender yet crisp.
- Combine the drained pasta with the cooked garlic scapes, reserved cooking water, vegan Parmesan, and parsley.
- Season with lemon juice, zest, and black pepper, adjusting with salt as needed.
