- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/4 cup (60ml) olive oil
- 3 tbsp freshly grated parmesan cheese
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley
- Lemon wedges (for serving)
Instructions
- Prep chicken: Pound chicken breasts to even 1-inch thickness using a meat mallet.
- Make marinade: Whisk together olive oil, parmesan, garlic, lemon juice, Italian seasoning, salt, pepper, and red pepper flakes.
- Marinate: Coat chicken in marinade and refrigerate for at least 30 minutes (or up to 4 hours).
- Preheat grill to medium-high heat (400°F/200°C). Clean and oil grates.
- Grill: Cook chicken for 6-7 minutes per side, basting with reserved marinade for first 5 minutes.
- Rest: Transfer to plate, sprinkle with fresh parsley, and let rest 5 minutes before serving with lemon wedges.
Notes
- For extra flavor, add 1/2 tsp smoked paprika to marinade.
- No grill? Cook in grill pan over medium-high heat.
- Internal temp should reach 165°F (74°C).
- Double the parmesan and sprinkle on during last 2 minutes for a crustier topping.
