- 2 boneless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup Parmesan cheese, freshly grated
- 2 cups broccoli florets (or your choice of veggies)
- Salt, pepper, and Italian herbs to taste
- Handful of fresh parsley, chopped for garnish
Instructions
- Boil Tortellini: Bring a large pot of salted water to a boil. Add your tortellini and cook according to package instructions (usually about 3-5 minutes) or until they float to the surface. Drain and set aside.
- Cook Chicken: In a large skillet, heat the olive oil over medium-high heat. Season your bite-sized chicken pieces with salt, pepper, and Italian herbs. Cook until golden brown and cooked through, about 5–7 minutes. Remove from skillet and set aside.
- Sauté Garlic: In the same skillet, add the minced garlic. Sauté until fragrant, approximately 30 seconds—be careful not to burn it; it can turn bitter!
- Make Sauce: Pour in the heavy cream and chicken broth, scraping any browned bits off the bottom of the skillet for added flavor. Bring to a gentle simmer. Stir in the freshly-grated Parmesan cheese until smooth and creamy.
- Combine: Add the cooked chicken, broccoli, and tortellini back into the skillet. Toss everything together until well coated in that luscious sauce. Heat through for about 2–3 minutes until everything is warmed.
- Garnish & Serve: Sprinkle with chopped parsley for a fresh touch. Serve hot, and watch as your diners indulge in the creamy goodness!
