Ingredients

  • 46 boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice (jasmine or basmati)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley (optional) for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
  2. Add chopped onions and minced garlic; sauté until fragrant and onions are translucent, about 3-4 minutes.
  3. Add seasoned chicken pieces and brown for 5-7 minutes, turning occasionally.
  4. Stir in the rice and cook for 1 minute to toast the rice slightly.
  5. Pour in 2 cups of chicken broth, bring to a boil, then reduce heat to low.
  6. Cover and simmer for about 20 minutes until chicken is cooked through and rice is tender.
  7. Stir in ½ cup of grated parmesan cheese and season with salt and pepper.
  8. Garnish with fresh parsley, if desired, and serve warm.
