- 4–6 boneless, skinless chicken thighs or breasts
- 1 cup long-grain white rice (jasmine or basmati)
- 1 medium onion, chopped
- 4 cloves garlic, minced
- ½ cup grated parmesan cheese
- 2 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley (optional) for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering.
- Add chopped onions and minced garlic; sauté until fragrant and onions are translucent, about 3-4 minutes.
- Add seasoned chicken pieces and brown for 5-7 minutes, turning occasionally.
- Stir in the rice and cook for 1 minute to toast the rice slightly.
- Pour in 2 cups of chicken broth, bring to a boil, then reduce heat to low.
- Cover and simmer for about 20 minutes until chicken is cooked through and rice is tender.
- Stir in ½ cup of grated parmesan cheese and season with salt and pepper.
- Garnish with fresh parsley, if desired, and serve warm.
