- 3 pounds Yukon Gold Potatoes
- 1 whole head of Garlic
- 6 tablespoons Unsalted Butter
- 3/4 cup Whole Milk (room temperature)
- 1/4 cup Sour Cream
- 1 1/2 teaspoons Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Chopped Fresh Parsley (optional)
Instructions
- Preheat your oven to 400°F (204°C). Slice off the top of the garlic bulb, drizzle it with a bit of olive oil, wrap it in foil, and roast for 40 minutes until soft and fragrant.
- While the garlic roasts, peel and chop the Yukon Gold potatoes into 1-inch chunks. Place them in a large pot and cover with salted cold water. Bring to a boil over medium-high heat, then reduce to a simmer and cook until fork-tender—about 20 minutes.
- Drain the potatoes in a colander and return them to the pot over low heat for a couple of minutes to evaporate excess moisture.
- Squeeze the roasted garlic into the pot with potatoes. Add butter, milk, sour cream, salt, and pepper. Mash until fluffy and smooth, being careful not to overmix.
- Transfer to a serving bowl, sprinkle with chopped parsley if using, and serve warm.
Notes
For even fluffier potatoes, use an electric mixer on low speed. Store in the fridge for up to three days or freeze for later.
