- 2 pounds boneless, skinless chicken thighs
- 1/2 cup chopped fresh cilantro
- 5 tablespoons olive oil, divided
- 4 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons minced garlic
- 4 teaspoons chili powder
- 2 teaspoons chili pepper flakes
- 2 teaspoons ground cumin
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 2 teaspoons instant chicken bouillon
Instructions
- Prepare the Marinade: Combine cilantro, 4 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, chicken bouillon, chili powder, chili pepper flakes, cumin, kosher salt, and black pepper in a bowl.
- Marinate the Chicken: Place the chicken in a Ziplock bag or bowl, pour half of the marinade over it, and coat thoroughly. Marinate for 30 minutes or longer if possible.
- Heat the Pan: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium-high heat.
- Cook the Chicken: Add marinated chicken thighs to the pan, cooking for 4-5 minutes on each side until golden and cooked through.
- Serve: Plate the chicken, drizzle with reserved marinade, and garnish with additional cilantro if desired.
Notes
Allow chicken to sit at room temperature for about 15-20 minutes before marinating for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
