Description

Juicy and tender chicken thighs marinated in a vibrant garlic and lemon sauce, ready in just 30 minutes.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup chopped fresh cilantro
  • 5 tablespoons olive oil, divided
  • 4 tablespoons freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 2 tablespoons minced garlic
  • 4 teaspoons chili powder
  • 2 teaspoons chili pepper flakes
  • 2 teaspoons ground cumin
  • 2 teaspoons kosher salt
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons instant chicken bouillon

Instructions

  1. Prepare the Marinade: Combine cilantro, 4 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, chicken bouillon, chili powder, chili pepper flakes, cumin, kosher salt, and black pepper in a bowl.
  2. Marinate the Chicken: Place the chicken in a Ziplock bag or bowl, pour half of the marinade over it, and coat thoroughly. Marinate for 30 minutes or longer if possible.
  3. Heat the Pan: Heat 1 tablespoon of olive oil in a cast-iron skillet over medium-high heat.
  4. Cook the Chicken: Add marinated chicken thighs to the pan, cooking for 4-5 minutes on each side until golden and cooked through.
  5. Serve: Plate the chicken, drizzle with reserved marinade, and garnish with additional cilantro if desired.

Notes

Allow chicken to sit at room temperature for about 15-20 minutes before marinating for even cooking. Store leftovers in an airtight container in the fridge for up to 3 days.
