Description

A savory and tender prime rib roast infused with garlic and fresh herbs, perfect for gathering with family and friends.


Ingredients

  • 1 standing rib roast (approximately 57 lbs)
  • 46 cloves of garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a small bowl, mix together garlic, rosemary, thyme, olive oil, salt, and pepper to create a garlic herb paste.
  3. Rub the garlic herb mixture all over the prime rib.
  4. Place the roast in a roasting pan, bone side down.
  5. Roast for 15 minutes at 450°F.
  6. Reduce the oven temperature to 325°F (163°C) and roast for 1.5 to 2 hours, until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Let the roast rest for 20-30 minutes before slicing.
  8. Carve into thick slices and serve.

Notes

Allow the prime rib to reach room temperature before roasting for even cooking. Check the internal temperature with a meat thermometer to avoid overcooking.
