Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes until softened.
  2. Stir in the minced garlic and cumin. Cook for another minute until fragrant.
  3. Pour in the drained chickpeas and vegetable broth. Bring to a boil, then reduce to low and simmer for about 15-20 minutes.
  4. Season with salt and pepper to taste.
  5. If desired, use an immersion blender to achieve a smoother texture.
  6. Ladle into bowls, garnish with fresh parsley, and enjoy hot.

Notes
