- 4 cups vegetable broth
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, chopped
- 2 stalks celery, chopped

- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes until softened.
- Stir in the minced garlic and cumin. Cook for another minute until fragrant.
- Pour in the drained chickpeas and vegetable broth. Bring to a boil, then reduce to low and simmer for about 15-20 minutes.
- Season with salt and pepper to taste.
- If desired, use an immersion blender to achieve a smoother texture.
- Ladle into bowls, garnish with fresh parsley, and enjoy hot.
Notes
