Ingredients
Scale
1 pound sirloin or ribeye steak cut into bite-sized cubes
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic minced
1 teaspoon dried thyme or fresh thyme
1/2 teaspoon salt to taste
1/4 teaspoon black pepper to taste
1/2 teaspoon crushed red pepper flakes (optional for heat)
Chopped fresh parsley for garnish
Lemon wedges for serving (optional)
Instructions
Prep Steak: Pat steak cubes dry and season generously with salt and pepper.
Sear Steak: Heat 1 tbsp butter and oil in large cast iron skillet over high heat. Working in batches to avoid crowding, sear steak for 2-3 minutes per side until browned. Transfer to plate.
Make Sauce: Reduce heat to medium. Add remaining butter, garlic, rosemary, thyme, and red pepper flakes. Cook 30 seconds until fragrant.
Finish: Return steak to skillet. Add Worcestershire and lemon juice. Toss to coat and cook 1 minute more. Garnish with parsley.
Serve: Immediately with crusty bread or over mashed potatoes.

Cut Tip: Slice against the grain for maximum tenderness
Doneness Guide: 2 mins/side for rare, 3 for medium, 4 for well-done
Variations: Add mushrooms with garlic or splash of red wine for depth
