A comforting twist on classic lasagna featuring garlic butter shrimp and creamy cheeses, perfect for family gatherings.

- 1 lb large shrimp, peeled and deveined
- 8 oz oven-ready or boiled lasagna noodles
- 3 tbsp unsalted butter, divided
- 1 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1 cup heavy cream
- 1 cup whole milk ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp chopped fresh parsley for garnish
Instructions
- In a large skillet over medium heat, combine 1 tbsp olive oil and 2 tbsp butter. Once sizzling, add garlic and cook until fragrant, about 1 minute.
- Toss in the shrimp, seasoning with salt, black pepper, and lemon juice. Sauté for 2-3 minutes until shrimp turn pink, then remove and set aside.
- Deglaze the pan with white wine or broth, scraping up bits from the bottom. After 2 minutes, add remaining butter, heavy cream, lemon zest, and grated Parmesan. Stir and let simmer until thickened, about 3-5 minutes.
- Spread a layer of sauce on the bottom of a greased baking dish. Layer noodles, half of the ricotta, half of the shrimp, and half of the mozzarella. Top with more sauce. Repeat layers finishing with noodles and sauce.
- Cover with foil and bake in a preheated oven at 375°F for 25 minutes. Remove foil and bake for an additional 10-15 minutes until golden and bubbling.
- Let the lasagna rest for 10 minutes, garnish with parsley, and enjoy warm.
Notes
Letting the lasagna rest allows the layers to set for easier serving. Customize by substituting shrimp for scallops or vegetables as desired.
