Ingredients
- Prime Rib Roast: 4-6 pounds
- Garlic: 8 cloves, minced
- Unsalted Butter: ½ cup, room temperature
- Fresh Rosemary: 2 tablespoons, chopped (optional)
- Salt and Pepper: to taste
- Olive Oil: for coating the roast
Instructions
- Preheat your oven to 500°F (260°C).
- Let the prime rib sit at room temperature for about 1 hour.
- In a mixing bowl, combine softened butter, minced garlic, chopped rosemary, salt, and pepper.
- Rub olive oil all over the roast.
- Generously apply the garlic butter mixture all over the meat.
- Place the roast bone-side down on a rack in a roasting pan and roast for 15 minutes at 500°F.
- Reduce the oven temperature to 325°F (165°C) and roast until desired doneness (approx. 1.5 hours for medium-rare).
- Let the roast rest for 20 minutes before carving.
