Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 bell pepper, diced
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Thoroughly wash all your vegetables under cool running water and dry them gently with a clean kitchen towel.
  2. In a large bowl, combine the mixed greens, cherry tomatoes, diced cucumber, sliced red onion, and diced bell pepper.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, and season with salt and pepper to taste.
  4. Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
