Description
A warm, cheesy Fugazetta filled with provolone and mozzarella and sweet sautéed onions, perfect for sharing at family gatherings.
Ingredients

- 2 cups all-purpose flour
- 1 cup warm water
- 1 tablespoon active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup sliced onions (sautéed)
- 1 cup provolone cheese (shredded)
- 1 cup mozzarella cheese (shredded)
- Fresh oregano (optional)
Instructions
- Combine warm water, yeast, and sugar in a small bowl. Let it stand for 5-10 minutes until foamy.
- Mix flour and salt in a large bowl. Add the yeast mixture along with olive oil, and knead until smooth and elastic, about 5-7 minutes.
- Cover the dough and let it rise for 1 hour, or until it has doubled in size.
- Preheat the oven to 475°F (245°C) while you prepare the filling.
- Roll out half of the dough on a floured surface and place it in a greased pizza pan, ensuring it covers the base.
- Layer the provolone and mozzarella cheese evenly over the dough, then add the sautéed onions. If you desire, sprinkle with fresh oregano.
- Roll out the other half of the dough and cover the cheese and onion layer. Pinch the edges to seal the layers tightly.
- Bake for 20-25 minutes until golden brown.
- Allow to cool slightly before slicing and serving.
Notes
For a better dough rise, use bread flour instead of all-purpose flour. You can also use fresh mozzarella for a creamier filling.
