Description

A stunning dessert pizza with a soft sugar cookie crust, creamy vanilla frosting, and a colorful array of fresh seasonal fruits – as beautiful as it is delicious!


Ingredients

  • Crust:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • Toppings:
  • 2 cups assorted fresh fruits (strawberries, kiwi, blueberries, etc.)
  • 1/4 cup apricot jam (for glaze)
  • 1 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C). Grease 12-inch pizza pan.
  2. Make crust: Cream butter and sugar until fluffy. Beat in egg and vanilla. Gradually mix in flour, baking powder and salt.
  3. Press dough evenly into pan. Bake 12-15 minutes until lightly golden. Cool completely.
  4. Make frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Spread over cooled crust.
  5. Arrange fruit decoratively over frosting.
  6. Warm jam with water and brush over fruit for shiny glaze.
  7. Chill 1 hour before slicing. Store refrigerated.

  • For crispier crust, bake 2-3 minutes longer
  • Pat fruit dry before arranging to prevent sogginess
  • Use cookie cutters for fun shaped mini fruit pizzas
