A stunning dessert pizza with a soft sugar cookie crust, creamy vanilla frosting, and a colorful array of fresh seasonal fruits – as beautiful as it is delicious!

- Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Toppings:
- 2 cups assorted fresh fruits (strawberries, kiwi, blueberries, etc.)
- 1/4 cup apricot jam (for glaze)
- 1 tbsp water
Instructions
- Preheat oven to 350°F (175°C). Grease 12-inch pizza pan.
- Make crust: Cream butter and sugar until fluffy. Beat in egg and vanilla. Gradually mix in flour, baking powder and salt.
- Press dough evenly into pan. Bake 12-15 minutes until lightly golden. Cool completely.
- Make frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Spread over cooled crust.
- Arrange fruit decoratively over frosting.
- Warm jam with water and brush over fruit for shiny glaze.
- Chill 1 hour before slicing. Store refrigerated.
Notes
- For crispier crust, bake 2-3 minutes longer
- Pat fruit dry before arranging to prevent sogginess
- Use cookie cutters for fun shaped mini fruit pizzas
- Can substitute lemon curd for frosting layer
