Guilt-free Frozen Banana Bars made with ripe bananas and creamy coconut cream. A refreshing treat perfect for hot days!
Ingredients

- 1 cup unsweetened flaked coconut
- 1/2 cup whole, raw pecans
- 1/2 cup raw walnut pieces
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 3 large, extra ripe bananas
- 1 cup coconut cream
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp xanthan gum (optional)
Instructions
- Combine Ingredients: In your food processor, combine the unsweetened coconut, pecans, walnuts, cinnamon, and salt. Blend until you have a mixture that can be pressed together.
- Press into Pan: Line an 8″ x 8″ pan with parchment paper. Press the crust mixture firmly into the pan.
- Set Aside: Place your crust in the freezer while preparing the filling.
- Blend Filling Ingredients: In the same food processor, combine the ripe bananas, coconut cream, vanilla extract, and cinnamon. Blend until smooth and creamy.
- Pour and Freeze: Pour the filling over the crust, smoothing it out. Optional: sprinkle a little extra cinnamon on top.
- Freeze: Cover and freeze for at least 6 hours, until solid.
- Serve: Remove from the freezer, cut into 16 bars, and enjoy!
Notes
Store bars in an airtight container in the freezer. They last about 1 month.
