Description

Delightful sandwiches filled with creamy cheesecake and fresh strawberries, coated in a crispy exterior.


Ingredients

  • 8 thick slices of brioche or challah bread
  • 2 tablespoons unsalted butter, for frying
  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar, plus extra for dusting
  • 1/2 cup fresh strawberries, thinly sliced
  • 1/4 cup strawberry preserves
  • 2 large eggs
  • 3 tablespoons whole milk

Instructions

  1. In a mixing bowl, combine 4 ounces of softened cream cheese and 2 tablespoons of powdered sugar. Mix until smooth and fluffy.
  2. Lay out 4 slices of brioche. Spread a layer of cream cheese on each, add sliced strawberries and 1 tablespoon of strawberry preserves per sandwich. Top with remaining slices.
  3. In a shallow dish, beat 2 large eggs and whisk in 3 tablespoons of milk.
  4. Dip each sandwich into the egg mixture, coating both sides evenly.
  5. In a skillet, melt 1 tablespoon of butter over medium heat. Fry 2 sandwiches at a time for 2–3 minutes per side until golden brown.
  6. Transfer cooked sandwiches to a paper towel-lined plate. Dust with powdered sugar and serve immediately.

Notes

Use fresh strawberries for best taste. Leftovers can be stored in the fridge for up to 2 days.
