Description

A lusciously moist French Strawberry Cake layered with fluffy cream and fresh strawberries, perfect for celebrations.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh strawberries
  • 1/4 cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar, sifted
  • 1 tsp vanilla extract (for cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Mix flour, baking powder, and salt in a bowl, set aside.
  3. Cream together butter and sugar until fluffy (3-5 minutes).
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Fold in flour mixture until just combined.
  6. Divide batter between prepared pans and bake for 25-30 minutes.
  7. Let cakes cool in pans for 10 minutes, then transfer to wire rack.
  8. Slice strawberries, mix with sugar and lemon juice, let sit for 20-30 minutes.
  9. Whip cream with powdered sugar and vanilla until soft peaks form.
  10. Assemble the cake by layering cream and strawberries between cake layers.
  11. Top with remaining cream and strawberries, chill for at least an hour before serving.

Notes

Use fresh, seasonal strawberries for best flavor. The cake can be made a day in advance.
