- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups fresh strawberries
- 1/4 cup granulated sugar (for filling)
- 1 tbsp lemon juice
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar, sifted
- 1 tsp vanilla extract (for cream)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Mix flour, baking powder, and salt in a bowl, set aside.
- Cream together butter and sugar until fluffy (3-5 minutes).
- Add eggs one at a time, then mix in vanilla extract.
- Fold in flour mixture until just combined.
- Divide batter between prepared pans and bake for 25-30 minutes.
- Let cakes cool in pans for 10 minutes, then transfer to wire rack.
- Slice strawberries, mix with sugar and lemon juice, let sit for 20-30 minutes.
- Whip cream with powdered sugar and vanilla until soft peaks form.
- Assemble the cake by layering cream and strawberries between cake layers.
- Top with remaining cream and strawberries, chill for at least an hour before serving.
Notes
Use fresh, seasonal strawberries for best flavor. The cake can be made a day in advance.
