Ingredients

- 1 cup cake flour
- 1 1/2 cups granulated sugar, divided
- 1/4 teaspoon salt
- 12 large egg whites, at room temperature
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 2 ounces semisweet chocolate, melted
- Whipped cream and chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Sift together the cake flour, 1 cup of granulated sugar, and salt.
- Whip the egg whites and cream of tartar until soft peaks form.
- Gradually add the remaining 1/2 cup of granulated sugar to the soft peaks until stiff peaks form.
- Gently fold in the flour mixture and vanilla extract.
- Pour the batter into an ungreased angel food cake pan.
- Bake for 30-35 minutes until the top springs back when touched.
- Cool the cake upside down completely.
- For frosting, whip the heavy cream and powdered sugar until soft peaks form, then fold in the melted chocolate.
- Frost the cooled cake and garnish with whipped cream and chocolate shavings.
Notes
Use organic eggs for better flavor. Ensure ingredients are at room temperature for best results.
