Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar, divided
  • 1/4 teaspoon salt
  • 12 large egg whites, at room temperature
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 2 ounces semisweet chocolate, melted
  • Whipped cream and chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sift together the cake flour, 1 cup of granulated sugar, and salt.
  3. Whip the egg whites and cream of tartar until soft peaks form.
  4. Gradually add the remaining 1/2 cup of granulated sugar to the soft peaks until stiff peaks form.
  5. Gently fold in the flour mixture and vanilla extract.
  6. Pour the batter into an ungreased angel food cake pan.
  7. Bake for 30-35 minutes until the top springs back when touched.
  8. Cool the cake upside down completely.
  9. For frosting, whip the heavy cream and powdered sugar until soft peaks form, then fold in the melted chocolate.
  10. Frost the cooled cake and garnish with whipped cream and chocolate shavings.

Notes

Use organic eggs for better flavor. Ensure ingredients are at room temperature for best results.
