Description

A delicate French macaron recipe that transforms ordinary ingredients into delightful meringue masterpieces.


Ingredients

Scale
  • 150 grams super-fine almond flour
  • 180 grams powdered sugar
  • 1/4 teaspoon salt
  • 120 grams large egg whites (about 4 large eggs)
  • 60 grams granulated sugar
  • 4 drops liquid-gel food coloring
  • 1 teaspoon pure vanilla extract
  • Vanilla buttercream frosting (for filling)
  • Raspberry preserves (for filling)
  • Chocolate ganache (for filling)

Instructions

  1. Prepare a piping bag fitted with a large plain tip.
  2. Sift almond flour and powdered sugar together in a bowl.
  3. Whip egg whites with salt until frothy. Gradually add granulated sugar and whip until stiff peaks form.
  4. Add food coloring and vanilla to the meringue and mix to combine.
  5. Fold in the almond flour mixture gently in three additions until just combined.
  6. Transfer the batter to a piping bag and pipe mounds on a baking sheet lined with parchment paper.
  7. Tap the baking sheets to remove air bubbles and let the shells rest until dry to the touch.
  8. Bake in a preheated oven at 315°F for 12-15 minutes.
  9. Cool the shells and then fill one shell with desired filling and sandwich with another shell.

Notes

Ensure egg whites are at room temperature for better meringue. Keep macarons stored in an airtight container for best freshness.
