Description

A healthy twist on classic peanut butter muffins using chickpeas for added nutrition and fluffiness.


Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk (or any milk of choice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a blender or food processor, combine the chickpeas, peanut butter, honey, almond milk, vanilla extract, and baking powder. Pulse until smooth and well-combined.
  3. Gently fold in the chocolate chips with a spatula.
  4. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best results, ensure your peanut butter is at room temperature and use fresh baking powder for a good rise.
