Instructions
- Blend the Ingredients: In a powerful blender, combine the cottage cheese, eggs, rolled oats, vanilla extract, baking powder, and salt. Blend until smooth—about 30 seconds to a minute.
- Heat the Skillet: Preheat a non-stick skillet over medium heat. Once hot, add a teaspoon of butter or oil and swirl to coat the surface.
- Pour the Batter: Pour small amounts of batter onto the skillet to form pancakes, roughly 3 inches in diameter.
- Cook to Perfection: Cook until the surface starts to bubble, about 2-3 minutes. Flip carefully and cook the other side until golden brown, around another 1-2 minutes.
- Serve: Stack on a plate and add your favorite toppings like fresh fruit, maple syrup, or Greek yogurt.
