Description
A delicious and customizable rice bowl featuring spiced ground turkey, black beans, and corn, perfect for weeknight dinners.
Ingredients

- 1 tbsp olive oil
- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet (1 oz) taco seasoning OR 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika
- 1/2 cup water or chicken broth
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup frozen corn
- 4 cups cooked rice (brown or white)
Instructions
- Cook your rice according to the package directions.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.
- Stir in the minced garlic and sauté for about 1 minute.
- Add the ground turkey to the skillet, breaking it up with a wooden spoon while cooking for about 5-7 minutes.
- Stir in the taco seasoning (or your spice blend) and your choice of water or broth. Bring to a simmer and cook for 2-3 minutes.
- Stir in the rinsed black beans and frozen corn. Cook for another 3-5 minutes.
- Assemble your bowls by serving a portion of cooked rice topped with the ground turkey mixture.
- Add your favorite toppings and serve with lime wedges.
Notes
Feel free to customize toppings to suit your taste! Leftovers can be refrigerated for up to 4 days.
