Description

A delicious and customizable rice bowl featuring spiced ground turkey, black beans, and corn, perfect for weeknight dinners.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning OR 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika
  • 1/2 cup water or chicken broth
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 4 cups cooked rice (brown or white)

Instructions

  1. Cook your rice according to the package directions.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.
  3. Stir in the minced garlic and sauté for about 1 minute.
  4. Add the ground turkey to the skillet, breaking it up with a wooden spoon while cooking for about 5-7 minutes.
  5. Stir in the taco seasoning (or your spice blend) and your choice of water or broth. Bring to a simmer and cook for 2-3 minutes.
  6. Stir in the rinsed black beans and frozen corn. Cook for another 3-5 minutes.
  7. Assemble your bowls by serving a portion of cooked rice topped with the ground turkey mixture.
  8. Add your favorite toppings and serve with lime wedges.

Notes

Feel free to customize toppings to suit your taste! Leftovers can be refrigerated for up to 4 days.
