Description

A perfectly balanced chicken marinade with Mediterranean-inspired flavors of garlic, lemon, and oregano, sweetened with honey and deepened with soy sauce. This versatile marinade works great for grilling, baking, or pan-searing.


Ingredients

  • ¼ cup olive oil
  • ¼ cup soy sauce
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 tbsp honey
  • 1 tsp dried oregano
  • ½ tsp black pepper (freshly ground)
  • ½ tsp salt

Instructions

  1. In medium bowl, whisk together olive oil, soy sauce, lemon juice, and honey until emulsified.
  2. Add minced garlic, oregano, black pepper and salt. Whisk vigorously for 1 minute.
  3. Place chicken (up to 2 lbs) in resealable bag or shallow dish. Pour marinade over, coating evenly.
  4. Marinate in refrigerator: 30 minutes minimum, 4 hours ideal, or overnight for maximum flavor.
  5. Remove chicken 20 minutes before cooking. Discard used marinade.
  6. Cook as desired (grill 6-8 mins/side, bake at 375°F for 25-30 mins, or pan-sear 5-6 mins/side).

Notes

  • For food safety: Never reuse marinade that touched raw chicken
  • Make ahead: Marinade keeps refrigerated for 5 days (store separately)
  • Substitutions: Tamari for gluten-free, maple syrup for vegan
  • Best for: Chicken thighs/breasts (skin-on for grilling)
