Description
A perfectly balanced chicken marinade with Mediterranean-inspired flavors of garlic, lemon, and oregano, sweetened with honey and deepened with soy sauce. This versatile marinade works great for grilling, baking, or pan-searing.
Ingredients

- ¼ cup olive oil
- ¼ cup soy sauce
- 2 tbsp lemon juice (freshly squeezed)
- 3 cloves garlic, minced
- 1 tbsp honey
- 1 tsp dried oregano
- ½ tsp black pepper (freshly ground)
- ½ tsp salt
Instructions
- In medium bowl, whisk together olive oil, soy sauce, lemon juice, and honey until emulsified.
- Add minced garlic, oregano, black pepper and salt. Whisk vigorously for 1 minute.
- Place chicken (up to 2 lbs) in resealable bag or shallow dish. Pour marinade over, coating evenly.
- Marinate in refrigerator: 30 minutes minimum, 4 hours ideal, or overnight for maximum flavor.
- Remove chicken 20 minutes before cooking. Discard used marinade.
- Cook as desired (grill 6-8 mins/side, bake at 375°F for 25-30 mins, or pan-sear 5-6 mins/side).
Notes
- For food safety: Never reuse marinade that touched raw chicken
- Make ahead: Marinade keeps refrigerated for 5 days (store separately)
- Substitutions: Tamari for gluten-free, maple syrup for vegan
- Best for: Chicken thighs/breasts (skin-on for grilling)
