- 1 Tbsp ground cinnamon
- 2 tsp coriander seeds
- 1 piece star anise
- 20 pieces whole cloves
- 1 tsp Sichuan peppercorns (optional)
- 1 tsp fennel seeds (optional)
Instructions
- Toast the spices (optional but beneficial): In a dry skillet, add all of the whole spices (coriander seeds, star anise, cloves, Sichuan peppercorns, and fennel seeds). Turn the temperature to medium-high heat, stirring gently. You’ll know it’s ready when the coriander seeds darken slightly and a beautiful aroma fills your kitchen (roughly 2-3 minutes).
- Cool: Once done toasting, immediately pour the spices onto a plate to cool for about 5-10 minutes.
- Grind the spices: After cooling, use a coffee grinder, spice grinder, or mortar and pestle to pulverize the toasted spices. Add the ground cinnamon to the mix and grind until it forms a fine powder. Depending on your tool, this could take 30 seconds to a minute.
- Store: Transfer the freshly ground Five Spice Powder to an airtight container. Keep it in a cool, dry place, where it will stay fresh for up to 6 months.
Notes
Avoid over-toasting the spices to prevent bitterness. To prevent clumping, avoid moisture in your storage container.
